Terry says: ‘This recipe evolved from the familiar flavours of my mother’s fruit cakes from family Christmases in Oz, enlivened by the vibrant tastes of the Caribbean cooking tradition I’ve imbibed since moving to South London.‘

She's also been baking jars of beautiful, buttery biscuits in fantastic flavour combinations including Orange Blossom Anise; Rose Blossom, Barberry & Orange; and Lemon, Ginger & Thyme.
